Overview
Benzaldehyde gives the characteristic almond and cherry note in flavours and is used in soaps and fragrances. Industrially it is an intermediate for cinnamaldehyde, dyes, pharmaceuticals and agrochemicals.
It oxidises in air to benzoic acid, so it is supplied stabilised and kept under nitrogen.
