Overview
When heated, ammonium bicarbonate breaks down completely into ammonia, carbon dioxide and water, leaving no residue. That makes it ideal for thin, low-moisture products such as biscuits and crackers, where the ammonia can escape.
It is a white crystalline powder in food and technical grades.
