Overview
Liquid glucose controls crystallisation in sweets, adds body and chew, and keeps baked goods moist. Its dextrose equivalent (DE) sets sweetness and viscosity — around 40–42 DE is the classic confectionery grade.
It is supplied as a thick, clear syrup in drums or flexitanks.
