Overview
Sodium gluconate binds calcium, iron and other metals over a wide pH range. In concrete it retards setting and reduces water demand; in cleaners it chelates hard-water ions; in textiles and metal finishing it prevents deposits.
It is a white crystalline powder in technical and food grades.
